Hi, Seb
Personally, I think "Sebastian" is an GREAT name!  Distinctive, memorable and somewhat distinguished.  When you introdue yourself, you can always say something like, "Hello, I'm Sebastian, bu8t my friends call me, "Serb".  The full name will present the aforementioned distinctive, memorable and somewhat distinguished moniker that the restaurant's manager will like to use, and your spectators will be put at ease by knowing they can use the less-formal name your friends use.  Seems like a pretty good icebreaker, to me.

I think your biggest worry should be your poor social skills.  Only 3 Hellos in a year?  What's that about?

I agree with Amazing, you shouldn't need to, nor be forced, to addopt a stage name.  Talk to your boss.  My dad (even now!) keeps telling me to call myself the Great Benzini (no, I'm not making that up).  He also told me my tag line should be "it's a gas!" (which, I guess is a play on the name Benzini...).

My point is, talk to him.  Otherwise, YOU might be the Great Benzini...
